Pancakes With A Healthy 38ºN Twist

It’s that time of year for gorging on pancakes, but how about a healthier option? We like to fry up our pancakes with a 38ºN twist.

Three large eggs, around 120g buckwheat flour, almond milk, couple of table spoons of desiccated coconut, pinch of Himalayan rock salt and a drop of vanilla essence. Mix all that lot up in a bowl, adding flour/milk as required to get a nice smooth batter.

In a small frying pan melt a little virgin coconut oil and you’re away! I like to make this a little thicker than normal English pancakes, but it’s up to you.

Serve, and you’ll find that the coconut and vanilla gives them a sweet flavour, so I forgo the honey/syrup in favour of chopped strawberries and blueberries.
